Jessica has been one of the leading voices in the nutrition and wellness industry since 2003. As the founder and owner of Vital RD, her passion for growing a team of dietitians who focus on fulfilling the diverse nutritional needs of the community through individual counseling, media based messaging, and hospital + clinic-based services.
As an RDN, she is acutely passionate about providing onsite counseling and wellness programs to help clients navigate the nutritional maze towards a healthier life. Additionally, she is a Certified Diabetes Educator, a Personal Trainer and an AFAA (Aerobics and Fitness Association of America)-certified group fitness instructor.
Jessica holds a Bachelor’s degree at Colorado State University, completed post graduate work in Oneonta, New York, and is accredited by the Academy of Nutrition and Dietetics. She has developed programs in and has expertise in a vast number of areas: weight loss, diabetes, bariatrics, cardiac rehab, oncology, pediatrics, feeding disturbances, digestive diseases, food allergies, and intolerances as well as performance based nutrition.
A common voice in the media, she has been featured in weekly segments on Fox News and Channel 9 NBC. She is recognized as a leading, expert resource for demystifying the science behind nutrition and health for media outlets such as the Wall Street Journal, Oprah, WebMD, Prevention, Shape, Weight Watchers, Men’s Fitness, Reader’s Digest, and Martha Stewart Whole Living Magazine.
As a Registered Dietitian Nutritionist, Amanda’s passion lies in nutritional counseling for weight management, disease prevention, disease management, and diet modification. She creates sustainable food choices through recipe creation and offers various client customizations, including plant-based options. Amanda earned her Bachelor's at Texas Tech University and completed her postgraduate work at Baylor Scott & White in Dallas, Texas, earning accreditation from the Academy of Nutrition and Dietetics. In her free time, she volunteers in the community, hikes the Rocky Mountains, and experiments with new recipes.

Accredited by the Academy of Nutrition and Dietetics, she enjoys cooking with garden-fresh ingredients, paddleboarding, painting, and spending time with her family and dogs.

Meghan holds a BS in Dietetics from California State University, Fresno, and completed her dietetic internship through NutraCo. In her spare time, she enjoys traveling, attending community events, volunteering, listening to music, and spending time with her family, friends, and dog.

She is passionate about helping patients reach their personalized nutritional goals by using positive coaching methods and meeting patients where they are at. Nicole has a BS in medical dietetics from the University of Missouri-Columbia, where she completed a coordinated program in dietetics. Nicole has worked with a variety of conditions including public health settings centering around pregnancy and postpartum populations, along with early childhood and infancy. She also has experience working with various chronic disease states including cancer, Cystic Fibrosis, pulmonary infections, diabetes, irritable bowel diseases, and other dietary needs such as food allergies, desired weight loss and weight gain. In her free time she enjoys traveling, hiking, yoga, attending concerts, playing pickleball, paddleboarding, and spending time with friends and her goldendoodle dog named Mochi.

She earned her Bachelor’s degree in Health Care Management with a Minor in Management from Metropolitan State University of Denver. In her free time, she enjoys spending time with her daughters, husband, and Goldendoodle (Oakley). She also loves traveling and camping as well as, anything active; snowboarding, wakeboarding, paddleboarding, and hiking.
