Primarily virtual in nature, we use the health platform TeleHealth to connect with clients, which allows us to stay in touch in real time, refer to food logs, and have a stream of information to pull from.

Jessica Crandall

Owner

Jessica has been one of the leading voices in the nutrition and wellness industry since 2003. As the founder and owner of Vital RD, her passion for growing a team of dietitians who focus on fulfilling the diverse nutritional needs of the community through individual counseling, media based messaging, and hospital + clinic-based services.

As an RDN, she is acutely passionate about providing onsite counseling and wellness programs to help clients navigate the nutritional maze towards a healthier life. Additionally, she is a Certified Diabetes Educator, a Personal Trainer and an AFAA (Aerobics and Fitness Association of America)-certified group fitness instructor.

Jessica holds a Bachelor’s degree at Colorado State University, completed post graduate work in Oneonta, New York, and is accredited by the Academy of Nutrition and Dietetics. She has developed programs in and has expertise in a vast number of areas: weight loss, diabetes, bariatrics, cardiac rehab, oncology, pediatrics, feeding disturbances, digestive diseases, food allergies, and intolerances as well as performance based nutrition.

A common voice in the media, she has been featured in weekly segments on Fox News and Channel 9 NBC. She is recognized as a leading, expert resource for demystifying the science behind nutrition and health for media outlets such as the Wall Street Journal, Oprah, WebMD, Prevention, Shape, Weight Watchers, Men’s Fitness, Reader’s Digest, and Martha Stewart Whole Living Magazine.

Amanda Shumaker

Registered Dietitian Nutritionist

As a Registered Dietitian Nutritionist, Amanda’s passion lies in nutritional counseling in weight management, disease prevention, disease management, and diet modification. Amanda focuses on creating sustainable food choices through recipe creation while providing a wide variety of client customization, including plant-based options.

Amanda earned her Bachelor’s degree at Texas Tech University and completed her postgraduate work at Baylor Scott & White in Dallas, Texas, while earning her accreditation from the Academy of Nutrition and Dietetics. She is committed to helping others realize their potential to achieve a vibrant and healthy lifestyle. In her free time, you can find Amanda volunteering within the community, hiking the Rocky mountains, or experimenting with new recipes.

April Amiel

Registered Dietitian Nutritionist

April knows that understanding nutrition in today's world can feel impossible. Her goal as a dietitian is to provide a space where we can break down all the noise and provide individualized nutrition education that is understandable, and doable.  As a firm believer in the non-diet approach, April has a passion for helping people achieve their health goals by creating long-term, sustainable nutrition and lifestyle strategies.  She loves providing recipe and meal ideas, and has experience with family nutrition, as well as helping those struggling with disordered eating.

April earned a B.S. in Biology from the State University of New York, Plattsburgh, and a B.S. in Human Nutrition from the University of Rhode Island, where she also completed her Dietetic Internship.  In her free time, you can find her trying to keep up with her 9 and 11 year old boys, cooking and baking up healthy-ish family meals, and running the parks and trails of the front range.

Cassie Serpan

Registered Dietitian Nutritionist

Cassie is a Registered Dietitian with experience in weight management and performance nutrition. Her professional values stem from personal experience with weight management and nutrition. Cassie is a bariatric patient herself and specializes in care for others who have been through or are curious about the process. She became a dietitian after having life changing success with her own surgery. Cassie's approach to care is patient-centered and she is driven to see clients succeed in reaching whatever goals they set for themselves. There are many approaches to patient care, and providing empathy, encouragement, and support are her strengths. In addition to weight management, Cassie has a culinary background and loves to cook with food from her own garden in the summer. Experimenting with new foods and recipes is one of her many hobbies.

Cassie holds a BA from the University of Colorado in Communications, a BS from Metro State University of Denver in Nutrition and a Master of Science from the University of Rhode Island. She is accredited by the Academy of Nutrition and Dietetics. When she isn't working, she's enjoying the beautiful Colorado sunshine with her family and dogs.  She also likes to stand up paddleboard, paint watercolors, and collect houseplants.

Meghan Eoff

Registered Dietitian Nutritionist

Meghan’s goal as a dietitian is to nurture self-empowerment by helping guide and encourage individuals to establish a healthy relationship with food and to use it as a holistic avenue to their individualized health. By providing evidence-based nutrition education, she helps clients achieve their goals effectively and sustainably.

Meghan holds a BS in Dietetics from California State University, Fresno and completed her dietetic internship through NutraCo. In her spare time she enjoys traveling, attending community events, volunteering, listening to music, and spending time with her family, friends, and dog.

Receptionist & Administrative Assistant

Mary is the first point of contact for Vital RD. She values providing professional and friendly customer service to every client in an organized and efficient manner. Mary has a passion for helping clients discover sustainable healthy lives and loves hearing about client transformations.

She earned her Bachelor’s degree in Health Care Management with a Minor in Management from Metropolitan State University of Denver. In her free time, she enjoys spending time with her daughters, husband, and Goldendoodle (Oakley). She also loves traveling and camping as well as, anything active; snowboarding, wakeboarding, paddleboarding, and hiking.

Administrative Assistant

Cheyenne is the administrative assistant of Vital RD. Her focus centers around the success and happiness of every client through open, prompt and friendly communication. Cheyenne’s passion lies in creating a welcoming environment for every client to realize their healthy lifestyle potential.

Cheyenne earned her Bachelor’s degree at Colorado State University where her experience in communication, customer service and office management emphasized her passion for working with diverse groups of clients.

She is committed to helping others achieve their goals and prioritize happy healthy lifestyles. In her free time, you can find Cheyenne reading, running with her dog Milo, or crafting.
